I didn't take these pictures today or this week actually. I remember the day I took them though, the sun made an appearance late afternoon. Well, dinner ended up being late as I just had to get outside as I had been inside most of the day.
Today, it's raining sideways. I haven't seen the sun for days. So, yesterday I read a book - completely, cover to cover. I read in between loads of laundry. I read in the bathroom. I read while waiting for the kids at the bus stop. I read on the couch. I read in my bed. I read at the kitchen table.
I was reading when hubbie walked in from work. Dinner was late again.
Dinner tonight, a variation of lasagna that I have never made before. Instead of stacking the noodles - I am going to roll them up. I'm using spinach and cottage cheese instead of ricotta. I'll throw in a egg and some herbs. On top, a white sauce but simple with some diced tomatoes.
I'm hungry just thinking about it. So, enough already. Time to get dinner started.
Yummy! I want that dinner. I threw together a pan of nachos...it did not hit the spot. :/
ReplyDeleteI am the same way with knitting as of late.. spinning and dying too. I've made a veggie stuffed shell dish that sounds similar. Really yummy and freezes good too ~ Nice for a small dinner for one or emergency meal!
ReplyDeleteIt must be a good book! I'll have to look for that one. I've been reading a lot lately as well, probably due to all this rain. The pictures of the blossoms are beautiful.
